Most courgettes nowadays are bush plants so you shouldn't really need to pinch out any growing shoots. If your plant has more than one growing point, you just literally cut or twist off the other ones with your fingers. Keep the strongest growing shoot. New courgettes are produced near the growing point so if you take out the lot you won't have any more courgettes.
